Winter Warmer

Winter Warmer is our very popular winter seasonal; it's based on an 18th-century Wassail recipe. It takes a little longer to age than most of our other meads, so plan ahead!

5 Gallon/19L
OG = NA
FG = NA
ABV = 10.2% abv.

First thing's first: Make Valkyrie's Choice.
 
Next, add the following to your 5 gallon batch of Valkyrie’s Choice.
  • 1 tsp. Potassium Metabisulfite
  • 2 tsp. Potassium Sorbate (together with sulfites, this keeps the OJ from refermenting)
  • 1 lb. Chopped Raisins
  • 8 Cinnamon Sticks
  • 1/2 cup Orange Juice Concentrate
  • 4 cups VSOP Brandy of your choice
  • 4 cups of tea made by boiling the following for an hour:
    • 20 Cloves
    • 8 Cardamom Pods
    • 2 whole Nutmeg, crushed (not grated)

To get this carbonated, unfortunately you have to use kegs or some other pressure carbonation system. But, fear not: It's equally good uncarbonated, and it tastes great served warm!

How long of an ageing process do you recommend?

We leave it for two weeks on the spices, then mellow it for at least a month before serving.

It would be great to have the other seasonal meads recipes too, like the automn spice and fire on snow for example. They seem quite delicious!

Hey from the UK, h long do you leave the raisins and cinnamon sticks in for and roughly how long do you think it's going to take to mellow out? Fully appreciating the recipes I'm just starting to get into brewing meed

So do I make the Valkyries Choice and let it ferment and then add all of this recipe in the secondary? Or do I just append the ingredients?

You make Valkyrie's Choice, let it ferment, and then add all the ingredients to secondary! That way the yeast doesn't strip the flavors of the spices and the fruit lends some sweetness to the final product. You'll want to make sure you don't skip adding those sulfites and sorbate - don't want any exploding bottles!
